Write It Down Type It Up

Take this as a lesson. One we should have already learned. More times than we can count. Really, you would think we would have learned by now.

The first time we made bbq sauce, we liked it, but it wasn’t great. We tweaked it and didn’t write it down. Then we made it again and didn’t have those changes. Then we switched base recipes and made some minor changes. Again, we did not write them down. Grrrrrr. Finally, we made it and wrote down every step for the next batch.

We haven’t smoked or grilled anything that would call for bbq sauce in a while, so we tried to find it today. Note that I said tried. We couldn’t find it. I can’t believe that we didn’t type it out. We had absolutely nothing to go on except a vague memory of the sauce made at least a month ago and an idea to do something somewhat based on our rub mix.

Fortunately, Sebastian put together a pretty good guess. It wasn’t quite the same, but damn, it was still delicious.

So, in an effort to finally learn a lesson, here is our recipe:

1 Tblsp onion powder
1 tsp cumin
1 tsp coriander
1 tsp garlic powder
1 Tblsp chili powder
1 tsp oregano
1 tsp paprika
1/4 tsp salt
2 Tblsp butter
1 c ketchup
1/2 c cider vinegar
1 c dark Jamaican rum
2 Tblsp Worcestershire sauce
2 Tblsp hot sauce
1 c brown sugar

  1. Mix all of the dry spices, without the sugar, together and set aside.
  2. Cook the wet ingredients over medium heat until all of alcohol in the rum appears to be boiled away.
  3. Add spices and continue cooking until very near desired thickness.
  4. Add brown sugar and continue cooking until sugar is well mixed and desired thickness is reached.
